I love a good dip! Whether it’s my white queso or my crock pot queso – okay so most of them revolve around cheese dip but my go to cold dip actually came from my sister in law. She made this for mine and John’s Mexican Fiesta Couple Shower a few years ago. And I know it’s a hit because I recently made it for our 4th of July party and one of our friends would have probably taken home the rest of it if she weren’t getting on the plane the next morning.
Easy right? And delicious!
Black Bean, Corn & Feta Dip
- 2 cans of black beans (rinsed and drained)
- 2 cans of corn (drained)
- 8 oz. (1 cup) feta cheese
- ⅛ cup green onions, chopped
- ¼ teaspoo ngarlic powder
- ¼ c. olive oil
- ½ c. apple cider vinegar
- ½ c. sugar
- Mix all ingredients together.
- Refrigerate for 1-2 hours before serving
