Sundays in the Kitchen: Strawberry Oatmeal Bars

I guess Sundays bring out the baker in me. Who knew? I started off today with Homemade Buttermilk Biscuits,  Herbed Goat Cheese, Bacon & Beet Flatbread, and for dinner I am trying to make the Cuban breakfast that I ate at Patachou in the Park recently. But as a twist instead of doing a fried egg, I am going to grill quail that’s been marinating in a honey, lime, jalapeno vinaigrette then place it over white rice, black beans, and avocado. But of course before I start dinner I have mounds of laundry that have taken over our house.

  I recently made these a few Sundays ago. Enjoy!!  


Strawberry Oatmeal Bars
Crumb Layers:
  • 1½ c. oatmeal (old-fashioned or quick)
  • 1 c. brown sugar
  • 1 c. butter (2 sticks)
  • 1½ c. flour
  • 1 tsp. baking soda
  • 3 c. strawberries, cut into small slices
  • 1½c. sugar
  • 2 Tbsp. cornstarch
  • ⅓ c. oatmeal
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  1. Preheat oven to 350 degrees.
  2. In mixing bowl, combine the ingredients for the crumb layers. Mix until crumbly.
  3. Press ⅔ of mixture into bottom of a greased 9x13 pan and set aside.
  4. For filling, combine ingredients in saucepan. Bring to a boil, stirring occasionally. Remove from heat and let cool until slightly warm.
  5. Spread over bottom layer in pay. Top with remaining crumb mixture.
  6. Bake until topping is golden brown and filling is slightly bubbly, about 40 minutes.
