Cheese Please

I used to think there were only three types of cheese as a kid – Kraft singles, Velveeta, and Cheddar…now as I have grown up the only one of those I consider real cheese is Cheddar. Even though the others as much as I still love them just don’t cut it for me anymore – okay unless it’s cheese dip or a simple grilled cheese .

Cheddar – Creamy BBQ Chicken Pizza

American – White Queso

Gouda – Grit Cakes (recipe coming soon)

Swiss – Slow Cooker Scalloped Potatoes

Havarti – Shepherd’s Pie

Goat Cheese – Rosemary and Goat Cheese Ravioli

Feta – Greek Nachos

Gruyere – Beer Cheese Soup

Monterrey Jack – Baked Chiles Rellenos

Mozzarella – Caprese Chicken

Parmesan – Parmesan Chive Biscuits

Ricotta – Kale Pesto & 4 Cheese Pasta

Queso Fresco – Creamy Chicken Enchiladas

Pepper Jack – Mexicali Burgers

Blue Cheese – Does it count that I used to be obsessed with blue cheese dressing?

Gorgonzola – The one cheese I don’t care for. What can I say not all cheeses are for me. I know some of you are speechless by what I just said.

All of these cheeses are ones you can find at the grocery store. But what about recipes that call for cheese that you have never heard of or that you don’t know where to look? That’s where it gets a little tricky. There are three things that I love more about Indianapolis than Birmingham: pro sports, 4 real seasons and local food markets.  Vine & Table and Goose are just two of the places that I have found that satisfy my foodie needs more specifically my cheese, wine, and meat needs.

I love putting together a cheese board. I almost believe there is sort of an art to it. Later this month I’ll give you some tips to create the perfect cheese board.
