John and I have gotten into a routine of a late breakfast on Saturdays which leaves us only wanting something light for lunch. And we all know how much I love my sandwiches! It was actually quite interesting how this sandwich came up. Just like a lot of my sandwich inventions, I went to the fridge to see what I could come up with. Turkey- check. Cheese- check. And then I thought how about caramelizing some onions? Even better why not make it a little more savory and adding some beer and mustard? Now doesn’t that sound like a sandwich a husband would enjoy? We also had a little side bowl of my leftover Spicy Coconut Soup. Weird combination, I know, but boy did it work!
